Easy Cheesy Artichoke Bread
It’s nearly summer time and that means picnics, outdoor cooking, and all kinds of get-togethers with plenty of good food to be enjoyed with friends and family.
How many times have you been invited somewhere where you had to bring a dish but didn’t know what to fix? Well, that dilemma is over. Forget throwing together some potato salad like everyone else or grabbing something from the deli-section on the way there. This little recipe solves all your problems.
With the Fourth of July just around the corner, this is a star spangled winner that is surely cause for celebration. It’s different, easy to make, and it is delicious. Not to mention, the bragging rights that come with home-made.
I enjoy good tasting food…and tasting good food. And as much as I love to eat, I really don’t know how I have retained my schoolboy figure over the years.

I love this recipe. First off, as the title suggests, it is super easy to make. Secondly, it is so tangy and full of delicious flavor; people will be begging you for the recipe. It never fails.
I suppose it’s just human nature to keep an eye on the food you brought to see people’s reaction when they taste it. It’s my nature anyway. When you bring this, here’s how it goes. Someone will wander over to it, pick up a piece, and turn it slowly at different angles trying to determine what it is. Then they take a bite. The next thing they do is look around and say, “Ooh, this is great…who made this?”
You can’t go wrong with this recipe. It’s artichoke dip already on the bread and toasted. Yum yum.
Makes 8-10 servings
5 minutes prep time-20 minutes to bake
Ingredients:
1 cup mayonnaise (I use light & it works fine)
1 clove garlic, minced
2 cups grated fresh Parmesan cheese (can be ½ Parmesan & ½ Mozzarella)
1 jar seasoned artichoke hearts/drained and chopped
(I think marinated artichokes taste best but regular is okay)
1 loaf French bread, sliced in half lengthwise
Directions:
Mix mayo, garlic, cheese and chopped artichoke hearts well.
Spread on the bread-it makes enough to cover each side of the bread
Place on a baking sheet and bake at 375* for 20 minutes (After it’s baked, we like it a bit broiled on top so the cheese gets a little brown)
And that’s it! Cut into slices and serve hot if you can. If not, it is still great.
I could say, “Wash it down with a glass of pure, refreshing Tyent Water”…but that would be too cheesy.
